We have been dining on homemade chicken soup made with one of Broadened Horizons Organic Farm's happy free-range hens and some organic Peruvian purple potatoes (and some other vegetables). I can only say "Wow!" and a hearty "Thank you!" to both Farmer Leaf and the hen.

The hen was extremely flavorful, far more than any supermarket chicken I've ever tasted. This was one fantastic-tasting chicken!

We simmered the hen for about 4 hours, then deboned it and let it cool in the fridge. There was no waste from fat; there was nothing to skim. The next day the chicken and broth went into soup, which simmered a couple more hours until done.

The purple potatoes were also excellent. :) We had company over and served organic egg frittatas with some of those potatoes and it was delicious.

Way to go, Farmer Leaf!
